INGREDIENTS:

  • 6 hard-boiled eggs, peeled and prepared
  • 2 teaspoons Tajin spice
  • 1 avocado, peeled and pitted
  • 1 tablespoon minced white onion
  • 1 tablespoon fresh lime juice
  • Salt, to taste
  • Pepper, to taste
  • 6 slices jalapeno
  • 2 tablespoons charred corn kernels, removed from cob
  • 1 tablespoon crumbled cotija cheese (for sprinkling on top)

EQUIPMENT:

  • 1 pot to boil eggs
  • 1 mixing bowl for the filling
  • 1 piping bag for filling
  • 1 small plate for Tajin spice
  • 1 serving plate

Directions: 

  1. Hard-boiled eggs: Start by boiling the eggs. Place the eggs in a pot and add enough water to cover them completely. Bring the water to a boil, then reduce the heat and let the eggs simmer for about 9-12 minutes. Once done, transfer the eggs to a bowl of ice water to cool. Once cooled, peel and cut the eggs in half lengthwise.

  2. Remove yolks and prepare filling: Gently remove the yolks from the boiled eggs and place them in a mixing bowl. Add the avocado, minced white onion, lime juice, salt, pepper, and Tajin spice to the bowl. Mash and mix all the ingredients together until well combined and smooth. Adjust the seasonings to taste.

  3. Fill the egg whites: Transfer the filling mixture into a piping bag or a plastic bag with a corner snipped off. Pipe the filling into the hollowed-out egg white halves. Alternatively, you can spoon the filling into the egg whites.

  4. Tajin spice coating: Add the Tajin spice to a small plate. Gently dip the rim of each egg in the Tajin spice until it's lightly coated with the spice. Stand the eggs upright with the Tajin-coated rim facing upwards.

  5. Garnish: Top each deviled egg with a slice of jalapeno, a sprinkle of charred corn kernels, and crumbled cotija cheese.

  6. Serve: Arrange the deviled eggs on a serving plate, and if desired, garnish with a dusting of additional Tajin spice. You can also add extra toppings like fresh cilantro or chopped green onions, if desired.
